Gluten is totally vegetarian. Gluten is a protein in wheat and many other grains. That's what helps the formation of an elastic dough for the likes of rotis, pizza, etc. In fact, a mock-meat product called 'seitan' is made from this and is extensively used by vegetarians and vegans, especially in the west. Hope this helps.
