Does Brinjal get cooked with just oil?

Hi all
I tried to cook Brinjal with just oil and it wouldn't cook for a long time and finally i had to
pour water as usual and cook it ... It was quite tasty as i put some Ghee and curd..
Can somebody tell how to make Brinjal in different ways?
I ate Brinjal with Ghee and spicy masala ..It was very nice .It came in layers too and i was wanting to know how they exactly prepared it ... but...

Yes it can be cooked in just oil (Ghee or Jingeli Oil). It is called Katharikkai Nei Vathakkal.

Yes Sarah,brinjals get cooked in just oil. Sometimes I use to saute sliced brinjals with onion, chilli, curry leaves and salt in oil. But we have to cover the vessel and stir occasionally to get it cooked.
Did you try Hemant's Spicy Brinjal. It was good with chappathi. Try it.

Mini..pls guide me on how to make the dish u have mentioned ... i.e slicked brinjals with onion

OK sarah, here's what I do.
Thinly slice the brinjals, the long purple brinjal will be nice than the round, big eggplants. Do slice the brinjal just before adding to the oil, otherwise it may get darkened.
Heat oil in a non-stick pan, pop mustard seeds, then add sliced onion(1,medium), greenchillies(or red chillies), curry leaves and saute for 3 to 4 minutes. Now add the brinjal and salt, stir well. When the brinjals are hot, turn the flame to very low and cover the pan. Stir occasionally till the brinjals are cooked(about 15, 20 minutes). Some people add fresh sliced coconut pieces(not grated)along with onions, you can do that if you like.

Since it is cooking with just oil should I add around 3 to 4 tablspoons of oil for one long purple Brinjal ...

HI sarah,
Brinjals are great absorbers of oil due to their absorbant nature.usually we find a wide range of brinjals all over the world ,each having different properties.
not everybody needs to know the properties of brinjal to cook them.but there is a trick.for long purple brinjals,they contain a lot of water in them,so for how ever long u cook them in oil they shed out their own water & the curry becomes soggy.
usually for cookin brinjal just in oil u must go in for small brijals.that r usually purple/ sometimes even green.they r more fleshy.so they don't shed water.but they absorb a lot of oil.intially u will find that even after putting 3-4 tsp of oil the curry sticks to the pan,so add salt & other spices immediately when u put the brinjal & cover it to cook.
I hope this will give u better results in cooking brinjal in oil.

Sorry for the delay .I was held up at work
Heres the recipe for Upma with Broken Wheat
For 200 gms of wheat rava
In a Pressure cooker
Add 3 tablespoons of ghee and 1 table spoon of oil When the oil is hot add mustard seeds,curry leaves,urad dhal,Toor Dhal (usual upma thalippu items) and fry for a while.Now add sliced carrot ,green peas (add more veggies if you like)
and fry them for 2 minutes.
After that add the Broken wheat rava and fry that for 3 minutes in low flame .Now comes the stage where u have to add water.
For 1 cup rava add 1 1/4 cups of warm water and add salt ( i mix the salt in the water before pouring into the cooker)pressure cook for 2 whistles (depends on the cooker)
Its done.Enjoy the wheat rava upma.
