.cook the basmati or jeeraga samba rice separatly and let it cool.
.Grind ginger and garlic separatly.
.After frying onions in ghee, add the mutton pieces and fry for 10mins.Then add cardomom, cloves, cinnamon(whole spices) and fry for sometime.
.then add the garlic paste and after sometime add the ginger paste.
.In a bowl, to 1 cup curd add 2 cut tomatoes,8 green chillies, small bunch of coriander leaves and mint.Add salt and mix these well.
.Add the above to the meat, and cook till the meat is done.
.To this kurma add the cooked rice and mix well.
.If you need more sour taste(pulippu) and lime juice.
.Mix kesari powder in little milk and add to the biryani.Cashew paste can also be added.Close the vessel tightly. After 10mins stir the biryani well, and close tightly.
The trick is each ingredient should be fried well and BIRYANI TASTES GOOD WHEN IT IS CONSUMED 1-2HRS AFTER COOKING,the kurma must completly blend with the rice.
