hi vidya,
cut the idli's into finger size strips and deep fry in oil. its tasty and crispy. and also try this idli manchurian: make a paste of chilli powder, soya sauce ,ginger and garlic paste, salt and cornflour(egg optioanl). cut the idli's to cubes , dip this cubes in the above batter and deep fry them till golden brown and keep aside. now cut onions , green chillies and garlic . heat oil in a pan and fry the onions till golden brown add green chillies and garlic. finally add the fried idli's and chopped corriender leaves.

Janaki,
This is my father-in-law's recipe for the sauce on fried idlis. Turns out very good and spicy every time I make it.
Carrots - julienned (1 cup)
Green beans - julienned (1 cup)
Green peas - 1 cup
Potatoes - julienned (1 cup)
Green pepper (capsicum) - julienned (1 cup)
Tomato puree - 2 cups
Red onions - sliced lengthwise (1 cup)
Ginger & Garlic (crushed) - 1 tsp
Turmeric powder - 1/2 tsp
Cloves - 5
cinnamon stick - 1 inch piece
Fennel seeds - 1 tsp
White pepper powder - 1/2 tsp
Green chillies - 3-4 slit lengthwise
Ajino-moto - 1 pinch (optional)
Garam masala powder - 1 tsp
Red chili powder - 1 tsp (depends on your tolerance to heat)
Cumin-coriander powder - 1 tsp
Chopped cilantro (kothamalli) - 1/4 cup
Lemon wedges
Sugar - 1 pinch
Oil - 2 tbsp
Butter - 1 tbsp
Method:
Heat a heavy pan and melt butter and oil together.
Add cinnamon sticks, cloves, fennel seeds (sombu). Toast them (take care not to burn them).
Add Ginger garlic paste and let it brown (slightly). Add sliced onions, green chillies and let the onions become translucent. Add all the vegetables and saute. (Add carrots and potatoes first as they take longer to cook). Saute only for a couple of minutes and add Ajino-moto (optional) and white pepper pwder and sugar. Saute for a couple of more minutes. This is for the veggies to retain their color. Add the turmeric, cumin-coriander powder, chilli powder, salt and saute until veggies are tender but crisp. Add tomato puree and garam masala. Let it simmer for 4-5 minutes. Add water and adjust for salt as per your taste. Garnish with chopped cilantro.
When ready to serve the fried idlis. Place the idli pieces on the platter. Top with sauce and chopped cilantro on top. Add some grated cheese. You could microwave it for about 45 seconds for the cheese to melt at this point. Serve with lemon wedges. You'll leave your guests in awe.

The secret of making a good idli is the recipe with its proportion.

1. Fry - Idli
first,Steam the idlis and let it cool.
Now cut the idli across, into 4 even parts
Now deep fry the idly in the hot oil.
Serve with thick coconut chutney.
It is very ideal for snack or party appetizer.
2.Idli Upuma
10 cooked idli
1 big size onion
1/2 sp mustard seeds
1/2 sp Channa dal
1/2 sp urad dal
5 sp Oil
Curry leaves
Cilantro for garnish
METHOD :
Add oil to a non stick deep Kadai.
Add mustard, channa dal and urad dal and let it turn to golden brown
Add chopped onion and curry leaves and fry , then add turmeric powder and mix well
In a separate dish, use wet or moist hand to scramble the idlis
Next add finely scrambled idlis at a low heat .
Finally add cilantro to garnish.

3.Mix the batter as well as u can.

Hi,
I think khusbhoo idlis mean, round and fluffy idlis (anything otherthan flat idlis).. and I see a lot of good response of how to make them.
