Tamarind Rice - Iyengar Style

When I used to work in Chennai I had a colleague who used to bring this for me for lunch since it was my favourite. Would someone be able to give me a recipe for this?

‘Iyengar koil’ Puliyodharai
Pulikkaichal:
Mustard seeds - 1 tsp
Urad dal – 1 tbsp
Chana dal - 1 tbsp
Dry red chillies - 8-10 (broken into 1" pieces)
Whole turmeric, crushed coarsely - 2 tbsp
Methi (fenugreek) seeds - 1 tsp
Curry leaves - 10-12
Hing (asafoetida) - ~1 cm cube (do not use powder form)
Tamarind paste - 8 oz can
Salt
Sesame oil - 1 tbsp
Veg/canola/corn oil - 5 tbsp
Dry roast the turmeric and methi seeds, powder them and set aside.
Heat the canola oil and fry mustard seeds. When it crackles, add the dals, hing and the chillies. When the dals are golden brown, tear the curry leaves and add to it. Quickly, when the leaves splatter, add the tamarind paste mixed with 2 cups of water, salt (about the same quantity of the paste) and let it boil on a slow flame. When you get the right consistency, add the sesame oil, turn off the stove and add turmeric-methi powder.
Optional - add a couple of tbsp of (raw) jeera, which adds loads of flavor.
Masala powder (make just enough quantity, fresh, when ready to mix):
Roast coriander seeds, red chillies and methi seeds (a pinch) with a little bit of oil, and grind them.
Mixing: Cook the rice and spread it to cool well in a large bowl, adding a little bit of sesame oil. Fry peanuts in oil and add to it. Gently mix in the pulikkaichal (as much needed) and the masala powder. Your authentic Iyengar Puliyodharai tastes even better on the second day.
