In need of some thokku recipes!!

Hi all,
I'm in need of some thokku/puli kachal recipes which will stay in the fridge for a couple of months without spoiling. I'm looking for stuff like puliyodharai mix which can be just mixed with plain rice. Thanks!!

Tomato Thokku

Ingredients:
Tomatoes,large-6
Chilli pdr-2 tsp(use according to heat tolerance)
Turmeric pdr-1 tsp
Roasted & powdered Fenugreek(methi/uluva-a pinch.
Asafoetida pdr-1/2 tsp
Mustard seeds 1 tsp
Fresh Coriander-3/4 cup
salt as needed
Oil
Method:
Blend Tomatoes & fresh coriander to a paste.
Heat oil, add mustard seeds. When they sizzle & pop, add tomato paste, turmeric, asafoetida, chilli pdr & salt. Mix well and allow to cook till raw smell disappears. Turn off heat and immediately mix fenugreek pdr to the thokku.
Note: Can be stored in a jar and refrigerated.

Hi xyz,
If you want it to last for a couple of months, I would suggest that you add 1/4 cup of vinegar after the tomato paste and spices are cooked. Once you add vinegar, allow the mixture to simmer again on low heat for at least 1 min. before you turn the heat off.
