Masala Tea

Recently had Masala Tea at Indian Vegetarian resteraunt. Tried to recreate this at home, but was dissastified with the Masala spice mixture I bought at the Indian grocery store...used Laxmi brand....too strong in the pepper taste. Do you have any suggestions for making a "masala" spice mixture for masala tea....the tea in the resteraunt was very delicate, and the pepper was very subtle.

Hello Rainwater,
We Gujaratis are famous for making Masala for spiced tea in India.
Try the following combination for spice powder which we follow religiously since generations.
Dry Ginger 150 gms
cinnamon 50 gms
Black pepper 50 gms
Cardamom 25 gms
Make a fine powder of the above and use about two pinches of powder per cup of tea.
The best method og mixing the powder is just when the tea is mixed with cream and milk, and heated,(if you are using Indian method of making tea)
Or if you are making tea English style, you can add tea leaves and Tea masala powder together.Leave it aside covered for about five minutes.Now you can mix cream to tea and use.
I have reduced black pepper in the above version from our normal quantity by more than 50% as I think you do not like pepper much in your tea.

Add one or two powdered cloves (kirambu) instead of black pepper. It smells/tastes really good.

Thank you very much. I brew the tea the way the Indian lady at the grocery told me to. Add the tea to the boiling water, simmer and brew for some minutes, add the masala spices, brew for some minutes, add milk and sugar and brew simmering....strain.....I think your spice mix will be very good, especially since the mixture is generational heirloom.

For Indian tea, we normally use Red Label tea leaves (leaves or in powdered form) found in Indian stores.
Use 1 tsp of tea powder for 1 cup of tea.
Boil 3/4 cup of water, add the tea powder. Let it boil for a minute until the color comes out. Then add 1/4 cup of milk. Let the milk bubble up. At this stage you can add the masala. Let it stay on the stove (low) for 30 seconds. Filter out the tea using a tea strainer. Add sugar to taste.
