Hello Geetha!
'Dhum' is needed only in the gas cooking. it is easier to make the varieties of briyanis in microwave without dhum. The measurement of water or coconut milk for 1cup of rice is 2 cups. When the rice is being cooked in the high mode-you can make the masala in the gas fire. When the rice is half cooked, pour the thick masala in the rice,add enough salt for the rice, and a little ghee. mix well. Cook for some more minutes until all the water is fully absorbed. the briyani or ghee rice is ready now. But always remember to add lesser salt than the correct amount of salt needed for Briyani. If you want the correct recipe for ghee rice[microwave], then i will write about it.

Hello Geetha!
Here is the recipe you have asked..
GHEE RICE[MICROWAVE]
Soak 2 cups of raw rice in water for 1/2 hour. Measure 4 cups of thick coconut milk in a glass bowl. Drain the rice and add that to the coconut milk. Microwave high for 10 minutes. While it is cooking, place a small kadai on fire and add 2tbsps ghee. Add 1tbsp cummin seeds, 2 chinnamon pieces, 4 cardamom and 2 cloves. Then add 1sp garlic paste and 1sp ginger paste and fry for a few minutes. Add 1cup sliced onions and 4 green chillies. Fry for a few minutes. Add 2 springs of curry leaves. When the bleep sound comes from the micro oven, stop it and add the fried masala, mix well and then again cook for 5 to 8 minutes on High. Now add a little salt which is enough for 11/2 cups of rice, mix well and again cook on high for 2 or 3 minutes.As every microwave oven varies in every aspect, you must check between every 5 minutes whether the rice is cooked enough after the first intial 10 minutes.

Hi to all,
I'm new to this and I am looking for a seafood madras recipe. I haven't been able to find any on-line. I tried emulating a dish I had once tasted in an Indian restaurant, and it has met with a rather impressive success conssidering I'm not Indian... but I wanted to see if anyone actually KNEW of a recipe, since all I did was follow my nose. It's a good nose, but not an expert one. Thanks for the help.
