Hello Seetha,
Thanks for the request for Kerala recipes.
After seeing your suggestion in another thread I thought we will start Kerala recipes with the different items served for Onasadhya. Onam is in August and by then we can finish all the recipes for Onasadhya.
Traditionally for Onasadhya the meal is served on a plantain leaf. The different items are placed on a particular spot towards the edge of the leaf starting from the right hand side of the person sitting in front of the leaf. Then rice is served. Sambar, Parippu and Ghee are served on top of the rice.
Banana chips:
Banana chips are made for the sadhya. The banana is cut longitudinally through the center twice dividing it into four equal parts so that when sliced four quarter slices will result. The slices are thicker (approximately 1/8 inch) than the round banana chips. You can slice the bananas with hand and then fry the slices in oil just the way we make banana chips. I will post the round banana chip recipe here tomorrow. So we can have all the recipes for Onam on this thread.

Hi jyothi,
first you peel the kerala plaintains and put them into the turmeric water. then take themout one by one and cut them round slices .
then as you cut them put them on dry towel or paper so yu will not have too much water.
before doing this boil water and add salt lots of them . this you will perfect as you make the chips with experience.
the salt will be completeely disolved . and cooled,
then go thro the process of cutting the chips by then it would have absorbed the trumeric to give the yeellow color.
now heatr the oil and PLEASE MAKE SURE THAT THE OIL POT IS DEEP AND THE OIL IS NOT BRIMMING FULL.
THEN TOSS THE CHIPS INTO THE HOT OIL AND STIR FOR AWHILE WHEN YOU HEAER A CLICK CLIK SOUND OF THE CHIPS MOVING AROUND THEN ADD ONE OR TWO TABLESPOON OF SALT WATER INTO THE CHIPS , THE WHOLE THING WILL BE SUDSY AND THE OIL WILL TEND TO COME UP . THAT IS WHY YOU SHOULD NOT HAVE THE POT FILLED WITH OIL . IT HSOULD BE ONLY HALF FULL. THIS TAKES TIME AND AFTER THE FIRST ROUND YU WILL KNOWTO ADD MORE OR LESS SALT.
HOPE UI HAVE HELPED YOU. BE CAREFUL WHEN YOU DO THIS . BECAUSE THE FIRST TIME I DID THIS I HAVE AN ELECTRIC STOVE THE OIL CAME UP AND ALL FELL INTO THE COIL AND INSIDE IT WAS A BIG BIG HUGE MESS.

You have to add coconut to anything and everything you eat. That is enough to make it a Kerala dish.

Kerala style is so peculiar. The way they wash their hair.... They pour coconut oil over their heads and then take head bath, i think. You can see the oil glistening on their curly hair. Yuk !!!!!!!!!
And coconut in everything !!! Another Yuk !!!!!!!

once I tasted Vegetable biryani in an roadside restaurant in kerala. The taste was really superb. I tried that after searching many sites, but that taste I didn't get. Can anyone help?
