Help needed about using coconut

I am in USA and wud like to know
1.If u buy fresh coconut from Indian store how do u store it in fridge.And also how long will it stay good.
2.Other than that instantly if u want to use it
what is the easiest form available.I tried dry desicated coconut.But it doesn't taste good.
3.For coconut rice can u use coconut milk cans.
Where can I get coconut milk cans and what brand is good.

I buy fresh coconut from farmers market(chinese) and break them, take out the white portion after you come home, put them in a ziploc. It will stay even for 2 weeks. Whenever you need, 10 mts before, if u keep it outside, u can grind them in mixie.
Or, you can scrape the coconut directly and put it in a ziploc.
Recently, I have started buying fresh coconut pack(frozen-brand name is daily delight) which is also very good and fresh. I use both of them alternatively.
Reg., coconut milk can, u may use any of the brand(dont remmeber), they are all really thick and tasty. The one is brown color which I use to buy, but it does not matter. As I said earlier, can go with any brand.
For coconut milk, I dont use can milk. Fresh coconut only, I opt for. For pulav or briyani rices, I use them.

Store coconut in deep freezer. i have kept in deep freezer (first time after getting this tips)and it is more than two months, still fresh.

Keep the grated coconut in the freezer it will stay fresh for very long.
But before use defrost it in the microwave othewise it will be very hard to use.

You dont have to defrost, keep them an hour before you use to cook. It will come to normal, that is how I use to do.
