"Veg Kuruma" How to Make it?

Can you please help me to give recipe of veg Kuruma Always used with chappathi and porotta

Cut carrot, beans, brinjal& potatoes.
Boil the above vegetables.
Grind coconut, chilakara & greenchillies.
Cut onions.
Take oil in a kadai. Add chilakara. Add onion & fry it. Add all the boiled vegetables. Add also the grounded mixture.Add salt. Finally, add a cup of milk.
This vegetable kurma goes with chappatis & puris very well

Hi once again
Brinjal is the english name. It is called baingan in hindi, vankaya in telugu & kathirikai in tamil.
chilakara means jeera

here is veg kurma ..
Ingredients:
2 cups peas boiled
1 large carrot chopped and boiled
1/2 cup tomato sauce
1/4 cup curd
1/4 cup malai(cream)
3 tbsp. butter
10-15 cashewnuts
20 raisins
1 tbsp. coriander chopped
1 tbsp. ghee
salt to taste
Dry Masala:
1 tsp. cuminseeds
2 tsp. khuskhus (poppyseeds)
1 tsp. cardamoms
Wet Masala:
1 large onion
1/4 cup coconut shredded
3 green chillies
Method:
Grind the dry and wet masalas separately.
Chop all the fruit fine. Heat ghee and fry cashews, drain and keep aside.
Add butter to ghee and heat, add the wet masala and fry for 2 minutes.
Add the dry masala and salt and fry 2 more minutes.
Add the carrots and peas, mix together curd and cream and add to gravy.
Allow to thicken a bit, cashews and raisins and boil till the gravy is thick and the fat separates.
Garnish with grated cheese ,coriander .

Try this veg kurma. you may like it.
Fresh vegetables: Peas, Carrot, Beans & Potatoes.
Onion BIG 3 or 4, Tomatoes - 4, Ginger Garlic Paste - 2 spoons. Cashewnuts - 5 or 6, Coconut Milk - 1 cup. Sombu - little, Pattai & Krambu - 3 pieces. Oil. Kara podi.
Method : Cut the vegetables in the required size and keep them aside. soak cashew for a while in water and grind into thick paste along with sombu and mix it in the coconut milk. Powder pattai & Krambu. Cut onions & tomatoes to small slices. Fry onions in oil till they are golden brown. Add 2 teaspoons of kara podi (mixture of chilli & Dhaniya in the ratio 2:1) to it and fry nicely. Add tomatoes and fry till everything gets collected into fine paste. Now add Ginger garlic paste and pattai Krambu powder. Fry till the raw smell disappears. Now add the uncooked vegetables and sufficient quantity of water and allow it to get cooked. Add required amt of salt to it. Allow the potatoes to be cooked. Once the vegetables are soft add COconut milk and cashew mixture and allow the gravy to thicken for about then minutes. IT will have a real rich taste and u can name it Navaratan Kurma.

chilakara or jilakara means cumin seeds and brinjal is eggplant.(small brinjals in Indian store not the big ones in other stores)small brinjals are tastier(my opinion)

Hello,
A small tip when buying Brinjals/egg plant.
Press with thumb, if you feel hard, do not buy.It will be full of seeds.
When you press, if it feels soft , it has no seeds in them.
