Onion Gravy Starter

Can anyone out there tell me how the Indian Restaurants in England make their base Onion/Curry gravy that they use when making a curry. Curry is made by preparing fish, meat, chicken or vegetables first. Then the dry spices are added to a spiced oil, curry gravy added to make the body of the curry. It is like a watery curry to which other ingredients are added to get the final dish. I am told that there is one ingredient that is used in this gravy which gives it a sweet smell. Any ideas? Please help!!!!!
