how to male chappatti? PLS HELP.

I'm assuming the .sg address means you're in Singapore. This shouldn't be so hard.
1. Get atta. The nice hard winter wheat flour develops a beautiful dough with little kneading and is great.
2. If you can't get atta, get bread flour. Don't try this recipe with whole wheat / all purpose (maida) flour. I've had difficulties with those.
OKay, now for every cup atta, you're going to add 1/3 cup *warm* water. This is important. Add 1tsp oil/ghee also. Add the water to the atta in small amounts, and knewd well. You should knead till you get a nice elastic flour that springs back when you poke/slap it. I use a food processor for this step. You can also use a bread machine/ mixer with dough hooks. Or your hands.
Turn the dough out on a floured chapati kal/stone surface/hard other surface. Knead some more, turning about 90 degrees (the dough, not you) every 30s or so. After ~ 10min of this, take a 10 -15 min break and let the dough rest, covered in a warm place.
Start heating up a tavva. Preferably cast iron, seasoned. Don't put any fat in it here, just warm it up till you can sizzle some water on it.
While the tavva is warming up, take your flour. Pinch of a small lemon sized ball. Lay it flat on a floured (this is important or it will stick to the surface) and roll it out with a rolling pin. This takes practice to get it circular. The funny shaped chapatis taste just as good. Don't worry.
Once the chapati is rolled out, put it on the warm tavva. Start kneading your next chapatis. In 1-2 min, the chapati will look nice and cooked (wheatish color with brown spots) on the hot side, and maybe even puff up satisfyingly if you have a good dough. Flip it over. Cook other side. As you take the chapati off off the tavva, butter it/ghee it. If you add fat to the tavva, it will smoke, and maybe sear your chapati.
Keep the cooked chapatis covered with a towel to keep the moist. Serve hot, preferably. Enjoy with any one of many side dishes of your choice. I like mine with tengai chutney and jam =)
Any left over dough can be refrigerated and reused upto 3-4 days.
Variations:
1. Salt /Sugar in the chapati mix, to your taste,
2. Jeera (cumin seeds) to kick it up a notch, black pepper, chili powder.
3. Replace 1/3 of atta flour with cornmeal, or millet meal. Tastes good, nourishing too.
3. Replace upto 1/2 the liquid added with milk or yogurt. Add butter to the mix to make it a richer taste.
Experiment. It took me 3-4 tries to get it straight. But it's a very satisfying feeling to cook it =) Let me know how it goes.

Hi there. It's me Vennila. The Chappatti i made was very tasty and yes i am from Singapore how about u? The receipe u gave me turned out very well. Anyway it was for our family lunch with mutton curry. Oh yes I lost 2kg rolling the dough!!!

I live in the US. That's why in some places it may be hard to get atta - if you're not near an Indian grocery store, but you can get bread flour in almost all general food/grocery stores in the US.
It's X'mas eve here - probably past it for you, but Selamat Hari Raya right back, and Gong Xi Fa Cai coming up =)
Now that you have a feel of how the dough gets when ready maybe you don't have to lose 2kg - unless you want to =) Hopefully your family appreciated this!

You can try using a "Roti Maker" or as its called in the USA "Tortilla Maker" WIth practice it gives you perfect round chappatis.

Dear Sundar,
I envy you. I tried making chappati several times but they r hard ! Need advise.Is it due to my atta flour(poor quality?), or 2 hot tavva or the rolled chapati 2 thin/thick?

You have to add ghee in the floor. Not to much, just a little. That would definitely solve the problem. If you still find it hard, try adding a teaspoon of yogurt. Will definitely help. Keep the fire of the flame, not to big and not to small.. in the middle..

In USA, some Temples use commercial tortilla makers to make chapathis. But these are very expensive and costs anywhere from $9000 to $25,000 depending on how big unit you need, if you also want the hotplate and kneader attachments etc. We sell these commercial machines.
