Indian Cooking without onions/garlic

Hi, I just came across your website today. I would be grateful if anyone could provide me with some Indian Vegetarian Recipes without the use of onions or garlic as I am allergic to them.

Hello En Xiao ,
There is nothing called Indian cooking just as Chinese cooking. Cooking in Hunan will differ from Beijing. There is a vast difference in different regions's cookery.
You might not get correct picture if you have not tried different region's foods.
First of all please specify what type of ingredients you like and what type of spices you would prefer. Based on that we can recommand what dishes you may like.

Thank you for your reply. I would like to know the recipes for a Vegetable curry. However, I noticed that onions and garlic are some of the ingredients used in curry, besides other spices. I was wondering if there is a substitute for onions and garlic if I am allergic to the latter.

Nee Hao !!
You can use Asfoetida (little) in place of Onion and Garlic.

Hello En Xiao
As a fellow allergy sufferer of Garlic, Onion & Leek, I use Celery Salt as a substitute to give food flavour.
FYI I have just come across an Indian cookery book called "Cooking without Onions & Garlic" author Parul Singhal. I'm finding it difficult to locate the book so can't recommend the recipes, but they are all vegitarian.

I found a potato recipe by Charishma Dasvani.
Here it is.
"Potatoes with Tamarind. This is a Saatvik food recipe. It happens to be one of my favourite potato recipes."
400 g potatoes, boiled and peeled,cut into one inch pieces
2 tablespoons coconut, grated
4 red chilies, whole
1 cup tamarind pulp
salt
2 tablespoons jaggery
1 tablespoon instant quick-cooking oat
oil, as required
1/2 teaspoon mustard seeds
7-8 curry leaves
water, as required
1. Cut potatoes into 1 inch cubes and keep aside.
2. Grind coconut, chillies and tamarind to a paste using water as necessary.
3. Add this paste to the potatoes.
4. Add salt, jaggery, oats and enough water to cook.
5. Bring to a boil.
6. Simmer on low flame for 8 minutes.
7. Adjust seasoning and tanginess.
8. Add more tamarind pulp, if necessary.
9. Heat 2 tsps. oil in a pan.
10. Add mustard seeds.
11. Allow to splutter.
12. Add curry leaves.
13. After they sizzle a little, remove from flame.
14. Pour this mixture over the potatoes.
15. Serve hot with rotis or parathas and enjoy a memorable lunch!
