Avacadoes - 4
Jalapeno peppers - marinated(you get those in the local grocery)- 2 tablespoons - finely chopped
Onion - finely chopped - 2 table spoons
Coriander leaves - 1/2 a bunch - finely chopped.
Garlic - 3 cloves(chopped)
Frozen peas - 3 table spoons.
Chilli powder - 1/2 tsp
Ginger - 1/4 inch piece
Salt to taste
lime juice.
Method:
Cook everything(except the lime juice) in a non-stick pan(without oil and little water. You can use the Oil spray if you like). Once the onion is cooked, blend everything into a fine paste. Splash the lime juice as desired.

Vegetable Sandwich
I was actually looking for a recipe which I once tasted in a recently opened Italian restuarant here.Anyway I got one very similar. It is a veggie sandwich and u'll surely love it!
Guacamole
2 ripe Avocados
1 vine ripe tomato, diced
1/2 small onion, minced
1 tbs. fresh Coriander, chopped
1 1/2 tbs. fresh lemon juice
1 clove garlic, minced and mashed to paste with 1/2 tsp. salt
1/4 pepper powder
Directions
To make guacamole dip, halve avocados and scoop out flesh into a bowl. Add remaining ingredients and stir till well combined.Or slightly puree it in a blender. Season with salt and pepper to taste.
Keep this in fridge for 1/2 hour.
Sandwich
sliced tomatoes
sliced mushrooms
sliced cucumber
sliced olives
shredded Romaine lettuce
any other fresh vegetable of your choice
sandwich bread(I used wheat bread)
fat free red wine vinegar--1 tbsp
1.On the bread, smear some red wine vinegar.
kepp all veggies and cover with the other slice.Lightly toast in a sandwich maker.Don't overtoast, otherwise the veggies will get cooked.keep only for 1 min. or less.
if u don't have a sandwich maker, toast bread on a toaster or hot pan.
2.open the sandwich and smear the guacomole dip on the veggies.Ready to eat.Tastes great and healthy too.
try this and send your comments!
