Freezing samosas

Could someone please give me advice on freezing meat and vegetable samosas and onion bahji. I am having a large party and want to cook and freeze in advance then reheat on the day.

I think you could make the samosas and freeze them. On the day of the party you could thaw them and fry them. I think this would ensure that they will be crispy when you serve them. I've never done this before but this is how they sell samosas at the indian store. Good Luck with your party.

A word about samosas. Most places I've been to have pathetic samosas. Basically there are two types, one made with kneaded dough and the other with a pastry like dough (which obviously is made from kneaded dough). The former type is known as Punjabi samosas and the latter as Bohri/Irani samosas. The former type has boiled potatoes as a stuffing unless they are the meat kind and the latter has onions for the major part. Punjabi type samosas cannot and should not be frozen. I say this, cause looks like Lavanya has suggested to fry them after thawing. These samosas could develop what is called synerisis - which is known as weeping of foods. The latter type of samosas, could be frozen raw and then fried. Punjabi type samosas could be frozen if they are fried till light brown color. You could refry them before using
