Clay pot Cooking

About a year ago i made dal in a clay pot (man paanai)but though the taste was awesome there were some granules of red mud in the dal. I then tried to use it for storing water & setting curd but the granules still persisted & the pot is just sitting in the shelf since then.
Can anyone guide me as to the correct method of cooking & how to identify a good quality one while purchasing itself ? Also what are the dishes that can & cannot be cooked in a mud vessel?
Any info./advice/ suggestions are highly appreciated.
