This is something you can get in cartons in North America. It is a thick cream and can be used in cooking. Does anyone know if this is available in India. If so where? Can this be made at home from the scratch. Is it just milk. Does anyone know?

Hi Honey!!!! No double meaning in my greeting to you.!!!!
Yes .... the cream you are refering to is available in India.
Please approach large dairies who supply this cream to icecream manufactures.Cream is sold around 40 Rupees per litre.I am not much sure though about the price.
I think it would be rather impossible to make at home.
Milk is different from cream in its Fat content.

Hello Honey. Thick cream and whipping cream are different. Not sure of its actual composition in food science terms. Whipping creams are used for desserts only (AFAIK) and thick creams go in finishing sauces. Yes Hemant is right - you would need a machine using centrifugal force to prepare cream at home from raw milk.

When whipping cream all parts of the operation should be very cold..put your beaters, and bowl in the freezer...the cream, too should be very close to freezing...but not quite...the ice crystals would not be good for whipped cream...
Try it this way and see what happens..
