Hi,
This is a simple way of making mushroom.
Onion-2 medium size
Tomato-1 1/2
Ginger and garlic paste-1 tspn
Red chilli powder-1 spoon
Coriander powder-1/2 spoon
Mushroom(cut into two halves)-2 cups
Oil -2 spoon
Salt to taste
Heat oil and fry onion till it turns brown.Add ginger and garlic paste fry for few seconds.Add tomato,fry for 3 seconds.Finaly, add mushroom,chilli powder,coriander powder,salt,1/2 cup water.Mix it well and cook untill its done.Finaly,garnish with coriander leaves.It goes with chathapati,puri.

I have a simple recipe for Mushroom fry. Slice the mushrooms. Chop 1 onion.
Put some oil in the pan and when it heats, add some mustard seeds. Add the onions. Saute until it turns pink. Add mushrooms and saute. Don't put any water. The mushrooms will give out water.
After the mushrooms are half done, add salt, a pinch of turmeric and some chilli powder. Keep saute-ing until it is done.

Another simple recipe: just fry some garlic till it starts getting brown. Add the mushrooms in thick slices. Add salt and black pepper and fry in its own juices till they're reduced but not completely dry. Enjoy!

Mushrooms in cream.
Chop onions, ginger,green chillies, and garlic into tiny pieces. Fry this in a little butter or oil. When light brown, add mushrooms chopped small. Add salt, cover and cook on low heat. Remove cover and boil off excess water. Add cream just before serving.
Not healthy, but delicious!!

Mushrooms release more water when cooked covered & by boiling off this excess water we also lose out on all the nutrients. It is best to add salt towards the end of cooking mushrooms to minimise the water released by them. Also cooking mushrooms uncovered retains their texture & colour.

But u could make mushroom curry with onions fried, then its good, i dont know how to make it but its prett good, try looking in google or something...

here is the recipe for kaalan kulambu ..
1. pearl onions -1 cup ( u can use one big onion(red) also if u dont get pearl onions ) . but u will not forget the taste if u use small onions
2.Garlic - 3 pal
3. red chillies -4 ( add according to ur liking)
4.corriander seeds -1 and half teaspoon
5. spices like cinnamon , cloves , poppy seeds
6. curry leaves -4
Fry all the above ingredients , adding some turmeric powder , then finally add 2 to 3 pieces(keethu)of coconut fry for 2 minutes . grind the above to a fine paste ..
Take a kadai , put some oil , add mustard seeds , add some big onions( cut lengthwise) , curry leaves and then add the ground paste , add water accordingly , put salt .. add the already microwaved mushrooms .. wait til it comes to a boil . add some (very little) coriander leaves at the end . u can have this kuzhambu with rice , idli , dosai , chappathi ..
u can put any mushroom u want , but oyster mushroom when used for this kuzhambu , tastes really great

Butoon mushroom gravy.
button mushrooms-6 pcs
onions- 2 large ones
green chillies-4
tomatoes-1 large
ginger-1 large piece
garlic-5-6 pcs
garam masala- 1&1/2 tsp
pepper powder- 1/2 tsp
salt to taste
how to prepare--
cut the mushrooms to small pcs& soak them in turmeric water for some time.
mean while saute sliced onions, tomatoes, green chillies& ginger garlic paste. when it is done, add the masala powder, pepper & salt. to this add the mushrooms( without the turmeric water). add enough water to cook the mushrooms. the curry will be done in 15 mins.
serve it hot with fresh chapaties

can also try button mushroom kurma
just like how u do the other kurma(s)..but this is vegetable kurma..can add other vegetables along with mushrooms

s . it doesnt have sour ingredient .This is the way this kulambu is prepared . u can add tomatoes along with onions etc in kadai .

Hi Preethi,
I made the mushroom kuzhambu yesterday. It was good to eat. I did add a tsp of tomato paste and used sliced button mushrooms.
I'll try later without the tomato paste and using oyster mushrooms. My hubby liked it a lot.

Try this different recipwe for mushroom which I discovered not knowing to cook mushroom.
Add oil, and heat. Add medium slices of potato, salt and a pinch of turmeric powder to it. Add water to boil potatoes till tender. After all the water is dried and potatoes are tender add sliced mushrooms. Cook with closed lid tossing now and then, till mushroom is done. add garam masala and serve hot.

This is a simple mushroom recipe I try at home:
Cut mushrooms into smaller pieces.
Slice onions lengthwise. They should NOT be finely chopped.
Heat some oil in a pan and fry the onions until the raw smell goes.
Then add mushroom pieces, salt and lots of pepper to taste.
Add some water to cook.
Cook till done. Neither the onions nor the mushroom should be overcooked.
This recipe will taste best with oyster mushrooms. To add more spice in Indian fashion, you may add turmeric powder, chopped tomatoes while cooking, and chopped coriander leaves immediately after it is done.

Tried this recipe yesterday.
Source: Malliga Badrinath's "Saiva Masala Kari Vagaigal" (Vegetarian Masala curry varieties)
I have made minor modifications based on what was available with me.
Kaalaan curry (Mushroom curry)
------------------------------
Button Mushrooms sliced - 1 packet
Onions - 2 (I used only 1)
Tomatoes - 2 (I used only 1)
Tamarind extract in 1 cup water (I substituted this for 1 tomato)
Curry leaves - a few
Mustard - a little
Asafoetida - a pinch
Coconut (grated) - 2 tbsp
cashews broken - 2 tbsp
black pepper - 1 tbsp
red chillies - 4
oil - 2 tsp
Method:
Dry roast red chillies and black pepper. Fry 1/2 an onion (sliced) in a little bit of oil. Grind fried onions, 1 tomato, dried chillies, black pepper, coconut and cashews into a fine paste.
Heta oil in a sauce pan. Add mustard, asafoetida and curry leaves. once the mustard splutters, add turmeric and the mushroom slices. Saute until mushrooms give out water and are cooked. Add the ground masala and 1 cup of tamarind water. Add salt to taste. Let it simmer for about 7-8 minutes. The gravy will come together and become brown in color. Garnish with cilantro leaves if desired and serve hot with phulkas or steamed rice.
It was yummy and all of us at home liked it a lot.
