Often I've read in recipes which require the use of dry yeast, the quantity of yeast to be used as "2 envelopes" . What does this mean ? Yeast comes either in a tin or a big pack. What do they mean by "envelope" ?

Dear Libby,
If you will permit me to answer, active dry yeast come in bulk, jars, AND envelopes, at least here in America. One envelope of active dry yeast is equivalent to 2 1/4 (two and one quarter) teaspoons of yeast. There is a type called rapid-rise active dry yeast. The envelope holds 2 teaspoons of yeast. Rapid-rise yeast works quickly but you will have better bread flavor if the dough is allowed to rise slowly.
