I have looked everywhere for a recipe for Papad. Please can someone tell me how to make this?

  Do you intend to make Papad originally? or make some recipe involving roasted or fried papads. There are Rajasthani recipes which involve the latter. The recipe of the former is generally not known by everybody except the professionals who manufacture them. I just know that the main ingredient used in manufacturing them is Urad Dal or Black Gram.

  If you are planning on making papad from the scratch, let me know. I'll post the recipe some time. But, let me warn you that it is a very elaborate procedure and need a kind of beating equipment which is commonly used in India but cannot be found in other countries. And it takes so much of time that people who know how to make it too, won't make it, but buy it from the store.

  for i kg papad take i kg urid dhal (phaseolus mungo ) finely grind flour,40 gm salt,35 gm sodabocarb, tespoon of asfetida, and according to variety you want to make add grinded black pepper or garlic, or chili etc add water to make a hard dough. crush it vigourusly for several minutes. make around 100 round pancakes each weighing around 10 to 12 gms, with about 7 " diameter. allow it to dry. at the time of crushing you can add refined edible oil. shelf life of properly dried papad is about 6 months. when one wishes to eat it can be roasted or deep fried.

  Papads can are normally made with Urad Dal but you can also make it with rice flour. The procedure... Soak 1 kg rice in water after washing it well.After you soak it for a 2-3 hrs you need to dry it in the sun. Now roast the rice in a pan without any oil for a few minutes. Then make a soft flour. Add Chillies if required, salt as per your needs and a tea spoon of Asafotida. Add some hot water and pound it in a stone mortar to make a hard dough. ( I am not sure if your knead machines will work as I have not tried them for this). Now your dough is ready make them into balls. Roll each ball into small wafer thin circles like roti and dry them in the sun for a day or two till they are dry.
