How do they get the softness in Restaurant Uthappam ?

I can never get it ... It becomes quite hard. I have used proper ingredients etc ... Is there some secret ingredient the restt people add ?

Hello Alamelu,
Adding cooking soda is the secret.
It gives fluffyness to oothapam, Set dosais, pesurettu, idlies, Dhokalas etc.
Use very judiciously please. For one litre of batter, use slightly less than quarter tea spoon.

When should the soda be added ?
After grinding the batter or just before
spreading the batter on the hot plate ?

Hello AA,
You need to add soda-bi-carb after you make the batter , and just before preparing the Uthappam on a tawa.
After adding soda, stir and mix it thoroughly , let it stand for atleast five minutes and then spread the batter on tawa.
