Parothas

My wife and I are trying to figure out how to make the tasty, flaky Tamil parothas. She doesn't remember how exactly to make them...her Mom didn't make them very much. On the other hand, I love them and they go great with meat (we're both RC =).

i think the trick is to use maida and knead it with water and a little ghee. keep wrapped in seran wrap for a few hours. to roll, make a cirle like roti, then smear with ghee well, esp. the edges, then beginning from the edge, fold it into little pleats like sari pleats till you get a long thin layered piece. then coil it around tightly into a round and roll out again and shallow fry in ghee. the pleats help to form layers.

I was told by a friend to just use oil (and lots of it). Leave it for a few hours then make your pleats. Leave it again for 6-7 hours. Now make the parota with your hands (flatten them with your palm and not with the roller). I haven't tried it but you sure can.

i agree with Reena's recipe..but after u cooked 3 parathas then take then and keep in the counter top one above the other then beat in the sides with ur hand. This will help parothas comeout well layered.

to mke a allo wala pariothe you should firstly:
firstly get some asli atta, and put it in a bowl and puh down with water. after the at#ta is all doughy, bruing ou the thafa and leave to heat, jujsu b4 u do the dough leave sum potatoes to boil, peel the skin from the potatoes and mash them up wid masala, make two rotian , lay one on the worktop, then put the allo mixture, then lay the other roti ontopm and then out it on the thafa aftewr this get sum ghee and put ti on both sides whilst flippin the roti, when trhe parotha is BROWN ITS DONE,
