To me Chinese foods in India were and are prepared for Indian taste buds. Its basic formula is to incorporate an abundance of chopped green chillies, ginger and garlic. Real Chinese foods do not call for such fussy mess. Nevertheless the Recipe. Chop a whole cauliflower, preferably using a chinese chopper. Do not wash, if preferred, wash before chopping. Add salt, black pepper, soya, cornstarch, ap flour, egg/s, a little chopped garlic and chopped cilantro. Heat oil in a vok/kadai and deep fry this mix shaping them in large sized marbles. Preferably fry them to a very light brown color. To make the sauce, heat a vok on high flame, add oil, add chopped ginger and garlic, add chopped green chillies, green onions, stir fry for 1 minute, add soya, a very small dash of tomato ketchup, salt and pepper. Stir for 1/2 a minute, and add a little water. When this sauce boils, add cornstarch dissolved in water. Boil to make the sauce thick and of coating consistency. Meanwhile, when making the sauce, deep fry the cauliflower fritters again till golden brown and crisp. Drain and add to the thickened sauce. Toss and sprinkle chopped cilantro and leaves of green onions.
