food research help please

I am doing a reporton Indian food, dealing with standard foods, celebration foods, prohibited foods, why eay what eat and whay not other things. General stuff, but i can't find anything but recipes, if you can tell me where to go to find this info. please do. thank you!

Milk Payasam OR Palpayasam
Ingredients
Milk = 12 cups
Sugar = 2 1/2 cups
Rice = 3/4 cup (Broken Red Raw Rice)
Cardamom =4
Butter (Unsalted) = 1 spoon
Boil the milk, add the washed rice and cook untill the milk becomes 2/3 quantity and the rice become soft, add sugar and cook it for about 10 min.Then add the powdered cardamom and butter.
Serve it hot or cold.Yeilds 5 to 6 serving.
