Idli Making vessel

Hi everybody.
I have never made Idlis at home and I have never seen an Idli maker as yet.However, I know that Idlis are steamed. I was wondering if it would be possible to make little idlis using an egg poacher. I live in UK and we can buy them here which make 4 poached eggs !

No u cant make it in egg poacher.U can buy idli moulds in all indian stores.

Yes you can make with microwawable egg poacher, put the batter in , fill the mold to 2/3 level and microwave for 90 seconds, leave it for a minute to cool and idlis are ready.

I have an egg poacher(microwavable) and I like to make idli using that. Can you tell me whether the poacher should be covered in the microwave when making idli or let it be open?

Hi guys!!!!
To make traditional steamed idlis, buy muffin pans made of aluminium foil. Cut the pans according to ur pressure cooker size. pour little batter in pans. Heat cooker with one cup of water, place a round serving rack inside the cooker and arrange the pans on it. Steam it for 7 mins without whistle. open after 2 mins. Soft and tasty idli i sready to eat!!!!!!

I am from US and we prepare idli. Its ok when it is hot. but when it is cool its becomming very hare. Like the taste is good but i want to get it very soft . can i get that by preparing the mixture solid or liquid or can i get that only by adding yeast to it. Other that adding yeast do you have any options to make the idli very soft.

Hi radhu,
I also live in US.I can suggest u something for nice soft idlis.Get idli rava and urad flour(powder)frm indian grocery.For 2 cups of idli rava take 1 cup of urad flour add little salt and water and mix it with ur hand and then grind it in the mixie by adding water.The batter for idli should always be thick.Keep it inside the oven.Thats it.The batter 'll be ready by next day.

Hello Preeti,
The fault lies with water of USA.
The water in USA is generally germfree and lacks in minerals also.What you need to do is , after mixing the batter, try keeping it near the room heater at 26 to 28degree C.also you must keep the batter in open air near your kitchen window or verendah for atleast 1 hour to let bacteria and natural yeast settling in the batter,Don't worry.the bacteria would die when you steam it.
Try and let me know.Also take care to keep the batter consistancy thicker.

how to make mallige idli as mentioned in parts of Karnataka or Khushboo idli as mentioned in parts of Tamil Nadu ? It is also called as mallippoo idli in Coimbatore.

TO Make Khushbu or Malligai idli..you can try this proportion
ponni puzhungal rice -3 cups
urad dal-1 cup
vendhayam-little(4 or 5 seeds)
soak everything seperatly for min 5 hrs.
grind urad dal for 30 mins.dont add too much water.you have to spill water frequently when it is grinding.it has to become very very soft..then only idli will be very soft.take out the grinded urad dal and put rice with vendayam and grind for 20 mins with adding water.
mix the batter adn add salt.keep it in electric oven(no need to turn it on) for 12 to 13 hrs.
b4 pouring it in the idli mould...do not over mix..then idli will become hard.

Hi,
Just thought would share a new way of making idlis..yesterday we brought the Gilts idli mix..
we dont have the idli mould...determind to eat the idlis...we used the steamer that you get along with the rice cooker...soaked one handkerchief wet...spread it over the steamer and pour one or one and half spoons of the batter. pour some water in the main cooking vessel and steam it for about 7 mins..and the idli's are ready..they wont be as soft as you nrmally get in hotels but they do taste good..atleast we enjoyed it..

Hi all,
How do you get the idlis to come really soft? I have tried yeast but for some reason it didnt work.
Also how do idlis come so white? Is there a powder used to make them white?
Can someone post a good recipe for idlis... Thanks VB

idli's come out soft if the Urad dal is ground finely...there is not pwder to make the idli's white..allow the idli batter to ferment properly..you should get soft idlis

Buy idli mix and idli steaming plates. The mix is super easy to use -- just add water and a bit of cooking oil as directed on package. Stack of idli steaming plates -- shallow perforated cups -- fits in a large saucepan or "dutch oven". Place small amount of water in bottom of pot, pour batter into iddli plates, and steam for amount of time indicated on package. Quck and easy enough to do for breakfast before work. Tastes almost as good as the idlis at the Taj in Mumbai. Idli plates and mix are available from india market websites.

I bought a pressure cooker and Idli plates on my last trip to India and I am getting fine soft idlies....
the problem is with the pressure cooker and with the plates...after the preparation the lower bottom of
the cooker and the lower idli plate turns black....anyone got similar experience...

If you are using an aluminum plate or aluminum pressure cooker, then it will turn black. The acidity in the idli batter reacts with the aluminum and makes it black. If you use SS idli plates, you wont have that problem.
