Fish/Chicken Curry

Hi All,
any body can give me a receipe for good fish/chicken curry. I am in usa and hope you will give me a receipe that will contain ingredients that are available in usa

(Preparation time 30 minutes. Cooking time 30 minutes.)
INGREDIENTS (Serves 4)
2 large mackerels weighing approximately 1.5kg (3lb 4oz)
1 lime or lemon
2 pieces of gamboge (kokam)
½ teaspoonful fenugreek seeds
3 cloves garlic chopped
2 green chillies chopped
5cm (2") piece of ginger grated
1 teaspoonful cumin powder
2 teaspoonsful coriander powder
1/4 teaspoonful turmeric
5 curry leaves
salt to taste
4 tablespoonsful coconut milk powder
100ml (3½ fl oz) cold water
METHOD
1. Soak the fenugreek seeds in 2 tablespoonsful of hot water. Wash the gamboge, and set aside.
2. Cut off the heads and tails of the mackerel. Slit each mackerel about 3cm (1½") along the belly-side, so that you can easily remove
the entrails and any roe. Cut each mackerel into 4 cutlets, and without washing put into a large bowl. Squeeze the lime or lemon juice
over the fish. Without discarding the lime or lemon skins mix them into the fish and leave for 15 minutes. Wash each piece of fish quickly
under running cold water and pat dry on kitchen paper.
3. In a wide-bottomed pan, large enough to hold the 10 pieces of fish in a single layer, combine the fenugreek, garlic, chillies, ginger,
cumin, coriander, turmeric and the curry leaves. Add the coconut milk powder and the water, and mix thoroughly. Now add the fish,
and carefully spoon over the spicy mixture to ensure that the fish is thoroughly coated in the spices. On a medium heat, bring to the boil
and simmer for 15 minutes. Turn the pieces of fish over, add the salt, and cook for a further 7 minutes. Discard the pieces of gamboge
and serve.( I always wear a pair of disposable gloves when cleaning fish, gamboge is available in any Asian shops and it's an optional )

Hai Gaj,
Here is a very simple and taste recipe.
Onion Chicken:
Take two tablespoon of oil and saute onoins cut into long strips, when onoins become translucent add chicken the same quantity of onion, saute till chicken changes its color.
Add red chillpowder 1tsp ,coriander powder 1/2tsp and a pinch of Aji no moto(optional). Saute this for two minutes, add salt and water simmer it for 10 to 15 minutes. Till the gravy becomes thick.

Hi Gaj,
Here is a recipe for chicken curry. Try it out.
Ingredients:
1 lb chicken thighs with bones cut into bite sized pieces
3 big tomatoes cut into small pieces
2 medium sized onions finely chopped
Ginger - 11/2 inch
Garlic - 6 pieces
Green chillies (medium hot) - 6
whole dry Red chillies - 4
Turmeric powder - 1/4 tsp
Red chilli powder - 1 tsp (optional)
Kulambu powder - 2 tsp
Salt to taste
1. Half boil chicken pieces with 1 cup of water and seperate the chicken pieces and soup and keep it aside.
2. Grind Ginger, garlic, red and green chillies in a blender.
3. Heat a non stick pan with 4 tsps of oil and fry the chopped onions until it becomes transulent and then add the tomatoes and mash it nicely and fry for 5 minutes in medium flame.
4. Then add the grinded mixture and fry it for a few min. until the garlic smell goes off. Then add turmeric powder, salt and kulambu podi and fry it for a minute.
5. Pour the chicken soup and turn on the flame to high and after it comes to a boil add the half-boiled chicken pieces and reduce the flame to medium. Taste it and add chili powder or salt as needed. cook until the chicken is fully cooked and the curry thickens.

Forget these awful receipes. I am not even indian and I've got a better one for you!
1pk Chicken pieces
Marinate then in the following ingredients
galic smashed
ginger strips
2 cups yougurt(Plain)
2 Spoon oil
1 Spoon Tumeric Powder
2 spoon Curry Powder
2 spoons cayeen pepper (Optional)
after a couple of hours:
In a heated pan, add 3 tbls of vegetable oil
Fry your chicken pieces till it turns white.
take the chicken out and put it aside
add the rest to pot and fry
1 spoon cardomon pods
1 spoon cumin
1 spoon fennel seeds
Bay leafs
salt, pepper
tomatoes
onions
after all ingredients is combined
add chicken and simmer it down till
it is cooked. You can add some more yogurt
or water if the stock is too dry.

Hi Gaj,
I am in uganda and i get less ingredients indian style than u do. Here is one for fish and one for chicken.
Fish Fry : marinate fish fillets with lemon juice or vinegar and add turmeric and chilli powder with a little salt. After 30 mins fry.
Chicken : Tiny pieces of chicken can be cooked with corriander, ginger, garlic, onion ,turmeric and salt. Add garam masala when well cooked.
Marinate chicken in curd or yougurt with ginger garlic paste. fry thinly sliced onions (around four onions for 250gms chicken) add bay leaves, cloves and cardamon add a little chicken masala (Shaan or Everest brand) and then add the marinated chicken and cook till done. U will enjoy this.
