Use of Mustard

Kaaram for Taste

Mustard for ?????
I dont believe there is any taste in mustard.. atleast the single mustard seeds which we intake

I beleive mustard seeds are used in Indian cooking as a flavouring agent. It has a delicate & nutty smell. My guess is that it has a slightly bitter taste.

Most spices are used for health benefits. Taste is secondary. Mustard is heating and helps digestion. Curry leaves also aid in digestion. Cilantro (kothamalli) is cooling, also has Vitamin C and fiber.

mustard seeds ar eused in bengal dish. It is very famous in using for fish delights.

Mustard Sauce for Sandwiches
½ kg. - Ordinary Black/Brown Mustard; ¼ kg. - White Mustard; 10-12 Red Dry Chillies; 8-10 Pods of Garlic; Salt to taste; Sugar 1 tbspn; A small piece of Drumstick tree bark; Vinegar as required for grinding.
Remove stones from Mustard Seeds, using vinegar little at a time grind all the ingredients except Sugar & Salt to a thick, smooth paste, add sugar & salt to taste – add a little more vinegar to make the paste into a sauce like consistency – Use a dry bottle & preserve. Use a dry spoon whenever you require to use the sauce.
This Sauce could be used for Sandwiches; Roast etc.,

For a variation:
You could reduce the red chillies say you could put 6 dry red chillies instead and add about 20 peppercorns & a small 1" pc of ginger & grind. Method is same
