here's kanchipuram iddli receipe (from Singapore)
500gm semolina,250ml yoghurt,100ml yogurt mixed with enough water to maek 400ml
200g green peas(fresh or frozen),100gm grated white coconut, 3cm ginger,minced,2 level tsps fine salt, 70gm chpped coriander leaves, 3tbsp light sesame oil, 50g channa dhall,100g cashewnuts(chopped)
1/2 tsp asafoetida, 400ml water ,1 tsp baking powder and 1/2 tsp bicarbonate soda
Method:- mix well - the first 8 items
Fry channa dhall in oil.add cashews and asafoedia and fry till golden brown.
Pour in fried ingredients into the batter.
add water,baking powder and bicarbonate soda. Mix well.The rest as usual.(steam for 10minutes).

Another recipe for iddli
Semolina Vermicelli Iddli
1 tbsp ghee, 100g vermicicelli(crushed)
1 /2 cup semolina
1/2 cup yogurt, 2 cups of water,salt
2 tbsp oil
1 tbsp channa dhall, 1t sp mustard seed
2 onions-sliced finely
2 green chilies-sliced,
a small knob f ginger(chopped)
curry leaves(chopped) 1/2 tsp bicarbonate of soda
Method:
Heat ghee -dry roast vermicelli till light brown
Keep aside.In the ghee add semolina and dry roast till frarant
Put vermicelli,semolin,salt,yoghurt.water in a mixing bowl-mix well Leave aside for 10 minuts.
Heat oil fry channa dhall,mustard seeds til dhallturns light brown. Add onion,ginger,chilli,curry leaves-Fry tillonions turn limp.
Add fried ingredients to iddli batter + bicarbonate soda.
Mix weel,leave aside 20 mins before steaming.

Hi Aarti,
Indha Idli pOla, oru malleable tiffin item veRa edhuvumE kidaiyAdhu. yEno Dosai romba popular agi adhula fusion cooking ellam vandhidichchu. Idliyilum andha mAdhiri niRaiya seyyalam.
Stuffed Idli
1. Idli Batter - To make around 15 idlis.
2. Onions - 200 gms
3. Carrots - 50 gms
4. Beans - 50 gms
5. Peas - 50 gms
6. Ginger-Garlic Paste - 1 tbsp
7. Chilli powder - 1 tbsp
8. Salt - To Taste
9. Oil - 2 tbsp
10. Corriander Leaves - For garnishing
1. Finely chhop the onions.
2. Finely chop carrot, beans and shell the peas.
3. Steam the vegetables till they are half done.
4. Heat Oil in a pan and saute the onions till they turn transparent.
5. Add ginger, garlic paste, chilli powder, salt and saute for 2-3 minutes.
6. Add the vegetables and cook till done.
7. Grease an idli mould, and pour batter till half-way.
8. Place some stuffing in the middle and pour some more batter till it is covered.
9. Now steam for a little longer than usual.
10. Make few slits on each idli, garnish with chopped corrainder and serve.

You can use lots of stuffings for the idli according to your taste. Any type of masala like cauliflower, paneer, tofu etc. can also be used. Non-vegeterians can try it with keema.
The only precaution is that the stuffing should be pretty dry. When you cook the masala see to that it is separate and without water like podimas.
