soudamani you can make very good koottu ,poriyal
and pachadi with pudalangai.
Recipe for poriyal:
Cut pudalangai vertically into small pieces(remove the seeds and the flesh).
In a heated kadai add required oil. Season it with
kadugu , uLuthamparuppu, red chillies and perungaiyam.
Now add pudalangai to the kadai.Fry it deeply with
required salt and a pinch of manjaL podi.
Before removing it from stove add coconut flakes.
To Make pachadi Follow the above method but while seasoning do not add red chillies and do not add
coconut flakes.Fry pudalangai with salt and manjapadi and later(pudalangai must be fried well) add it to thick curd and mix well. If desired add coriander leaves.
To make koottu cut pudalangai in the same manner as above and cook it with enough water, salt and manjapodi. While pudalangai is being cooked,
cook equal amounts of thuvar dal and moong dal.
Grind coconut, deisred red chillies, pepper and seeragam.
When pudalangai is cooked add the cooked dals and
the ground paste. Season it with mustard seeds, urad dal and curry leaves

With pudalangai, u can make even paruppu usili curry and ordinary fry curry with besan flour. Also, poricha kootu goes well with this veg.,
With the seeds, u can make thogayal that goes well with rice and for tiffins.
Good luck!!

Podalangaai Mulakushyam:
Cook tuwar daal in pressure cooker. Cut podalangai into small pieces and cook with enough water adding turmeric powder and salt.
Grind coconut and a teaspoon of jeerakam.
Add the tuwar daal to podalangai pieces and cook.
When it is softly cooked, add the coconut gravy and bring to boil. Heat kadai, pour two teaspoon of oil and heat. Add mustard seeds and when they splutter add curry leaves. Add this oil mixture to the podalangai mixture.
