Hi,
I guess we all r in a hurry everyday,or may be some will say cookin is not my pleasure,or to some,even though they like cooking ,they want everything fast & not spending a lota time in the kitchen.
In this phase we have a wonderful equipment called microwave.with the help of microwave we can almost make everything we want,with a very easy method ,n also the nutritions & vitamins remains in the food .
todays reciepe:MICROWAVE COCONUT RICE
INGREDIANTS:
Basmati rice 1 cup
Mustard seeds 1 tsp.
Peanuts(roasted & shelled) ½ cup
Curry leaves 10 nos.
Green chilies(seeded & chopped) 2 nos.
Garlic(chopped fine) 1 tbsp. (OPTIONAL)
Coconut(grated) ½ cup (OR FREEZED GRATEED COCONUT)
Turmeric powder ¼ tsp. (OPTIONAL)
Lemon juice 2 tbsps.
Coriander leaves(chopped) 2 tbsps.
Water 2 cups
Oil 3 tbsps.
Salt to taste
Method:
1.Wash and soak the rice for 1 hour. Drain well.
2.In an microwave proof bowl add oil, peanuts, mustard seeds, curry leaves, green chilies and garlic. Cover with a paper towel and cook on micro high for 4 minutes.
3.Add the rice, turmeric and water and cook on micro high for 10 minutes.
4.Mix and cook again for 2 minutes.
5.Add the grated coconut, coriander, lemon juice and salt. Mix with a fork.
6.Cook covered futher on Micro low for 2 minutes.
SERVE HOT WITH PAPADUMS/chutney.

for the cold winter evenings & for people suffering from irritating cough & sore throat,herez a very fast & healthy microwave reciepe.
Microwave mushroom& almond soup:
ingredients:
Mushroom(sliced) 225 gms.
Almonds(blanched & finely chopped) 10-12 nos.
Butter 25 gms.
Onion(chopped) 1 no.
Chicken stock 600 ml.
Cornflour 1 tbsp.
Cream 4 tbsps.
Milk 150 ml.
Salt and pepper to taste
method:1.Take a large microwave proof bowl and place chopped onions and butter in it. Cover and cook on micro high for 3 minutes.
2.Add the chicken stock, mushroom and almonds and cook on micro high for 15 minutes.
3.Mix the cornflour with little milk. Then stir in the remaining milk. Add to the mushroom mixture.
4.Cook on micro high for 5 minutes. Season with salt and pepper.
5.Serve hot with cream swirled on top.
TIP: If you want the soup to be more thick, add more cornflour.
Now the winter will be warmer & cosier with such easy & healthy food to eat.Enjoy!

I heard that microwave cooking is not very good and kills most of the nutrients even if they are covered with a lid?
