Re-using oil --- Harmful ?

Hi,
It is said that oil used for frying items like papad, murukku, bajji etc. becomes carcinogenic (cancer causing) & shouldn't be re-used. Is this correct? After how many such uses does the oil turn bad for health -- do we have to discard the oil after frying just one batch or what? Can anyone explain correctly?

Depends on several factors- type of oil, temperature, what's getting fried, etc.
Usually, mono-unstaurated oils (safflower, canola) are better, they form less harmful oxidative products when heated for a long time. Also, it is important to control the temp (don't let it become overheated). Electric fryers are good for this (buy the types where the pan can be removed from the unit for cleaning and also the adjustable temp type).
Last but not least, make sure the charred detritus from previous frying sessions doesn't end up contaminating the freshly fried stuff. I have seen this common with appalms where a black powdery residue remains. This powdery residue is the worst culprit in terms of carcinogenicity.
All in all, I think the overall risk of getting cancer from reusing oil is probably much lower than of getting heart disease from consuming the fried goodies.

I think Ramakrishana has given proper answer.Yes, saffola,canola oils are better for frying than others.
Burnt and partially burnt fats have carcinogenic properties so avoid them for deep frying of Meats and fishes .Tandoori food also especially chicken is harmful in this respect.

For deep frying use the Jr.Fry Daddy they are excellent and u can add less oil (i use less than what is recommended in the manual) comes out excellent-crispy,easy to clean-nonstick.I use canola oil for al my ccoking needs.(mono-unsaturated oil is always best of ones health, excpecially when deep frying)i heard on Martha Stewart/Cooking Channel that canola/olive oils are best for deep frying.

Thanks for the detail/explanation; I stopped using my Deep Fat Fryer(Black & Decker) 'cos i had to put a min. of 3litres oil and cleaning after each use was very difficult/messy.Now i think i'll start using it again as it's healthier; plus i use only Sunflower oil 'cos i feel olive oil is good only in small amounts like for sauteing, stir-fry poriyals or dishes like macaroni, soups etc. Wouldn't papads or bhajias fried in olive oil taste 'different'?

Revathy, for the Jr. Fry Daddy i only use 1cup.(manual recommends more but its a waste of so much oil, since the papad/bajjis etc. do not drink oil like when fried in a kadai!)and its not messy- oil does not splatter, easy clean up. I've seen the Black and Decker and other models they are huge(need lot of oil) and cost a lot too. This is just $19/- cheaper if u buy it when it comes on sale.(does not have temp. control but so far the oil has not smoked etc.i had no prob.) U could try using 1cup of oil in ur deep fryer, and see how it turns out.Good luck

Is the Jr.Fry daddy avl in all stores? Where can i look for them (esp sales)? I am allergic to the oil smoke whne I deep fry thereby I dont most of the times. Looks like you have a god solution here!!

I use a pinch of turmeric powder in oil for frying. this would help a little bit to prevent oxidation reactions. If you guys can stand the yellow color and odor use it.

Does that mean that we can reuse the oil Pradheep? Is it true that we should not use the oil once we use it for deep frying?

Seetha, it is available at Kmart/walmart/target, my friend recently bought one at Mervyns. Try even LONgs drug store/walgreen i remember seeing the Ad. for it. And no smoke! I add turmeric to my baji mix and to my meat-deep fry, but not directly in the oil as pradeep mentions.
