Spinach Dishes

Can any one tell me the various dishes I can make with Spinach?

Here is one simple and easy recipe
Spinach thoran
Spinach – 1 bunch, washed and chopped
Coconut – 3 tbsp (I use dry grated coconut (not the fine powder). If you are using fresh coconut take accordingly)
Ginger – ¼ tsp finely chopped
Onion – 1 tsp finely chopped
Green chilly – 2 or 3 cut into small pieces
Turmeric pdr – ¼ tsp
Curry leaves - a few
Mustard – ¼ tsp
Oil and salt
In a bowl, mix coconut, turmeric powder, salt, chopped onion and ginger and green chillies. Mix very well using your hand. If you use fresh coconut, you can blend all these together in a mixie without adding water. Heat oil in a heavy bottomed non-stick frying pan and when it is hot, pop the mustard seeds and then add curry leaves. Then add the chopped spinach leaves together with the coconut mixture. Fry in a high flame with continuous stirring until all the water is disappeared. Turn off the flame and enjoy with plain rice.
You can cook spinach with dal, but I don’t have a good recipe for that . And if you are a non-veg, you can cook spinach with chicken or mutton.
