Dear ladies,
How about a recipe for Mangalorean mutton curry? When I was a kid our neighbours used to invite me on Sundays to share this super delicious dish.
My mother asked for the recipe, it involved roasting the spices and coconut very dark brown, and tamarind and coconut milk were also added.
Now mummy has forgotten the recipe, and we have lost touch.
I tried finding it on the internet, but they all have tomatoes added. This one did NOT have tomatoes.

It is called TUHIRIA TUPARIA, made from rice and meat and it is made like biryani
For Tuhiria Tuparia :
1 kg of rice take 500 gms mutton and wash and soak rice for five hours. Boil mutton separately adding ginger-garlic paste, turmeric powder and salt.
In a pan heat oil. Add onions and again, chopped garlic. Saute. Add green chillies. Add Kashmiri Chilli for colour. Mix boiled meat, coriander powder, masala and chopped tomatoes, a bit of curd, coriander and curry leaves. Add rice and enough water for cooking. Do not stir.
Keep this on low fire for half an hour. When it is done, garnish with coriander leaves and serve hot.
This is TUHIRIA TUPARIA, recipe of which was given to me by my grandmother and which is being prepared by me on festive occasions. Tastes great.

MANGALOREAN MUTTON CURRY :
Preparation :
Cut mutton into one inch cubes. Boil till tender. Heat oil in a large pan. Add red chillies and green chillies. Add onions, ginger-garlic paste, tomatoes, curry masala powder, half a cup of thick tamarind juice and two spoonfuls of pudina paste. Add the mutton pieces and cook for 15 minutes on low fire.
This will go very well with pooris, rotis and dosas. This can also be mixed with rice and eaten as Mangalorean Mutton rice. Bound to become a favourite dish for all who have tasted it.
