Tortilla maker

Hello all!
I bought a electric tortilla maker from the Indian store and the sales man said I should be able to make Rotis faster by it. However when I tried it, the rotis are becoming too hard. Any ideas?

Hi Prabha,
Your tortilla maker needs to be seasoned. The way I went about it is for a few months i kept on making rotis until one fine day they turned out so good. Another tip is to let it heat for at least 10 min. Use dough which is kneaded the previous day - this helps gluten to form and you get better results. Coat the dough ball with little oil before pcing in tortilla maker.

Make the dough a little softer than regular chapatti dough. Spray a little oil on the roti as you make it. Also storing in a tortilla or roti box, or wrapping in clean kitchen towel helps keep the moisture in and prevents the rotis from drying out.

Prabha,
Season your machine by spraying some oil and leave the unit on for a few minutes when you use the first time.
The dough should not be too soft.
You should not press the top hard when you press it the first time. the pressure and the heat will make the roti dry out and it will not spread well.
Press gently the first time and then flip it and press a little more.
