Soak them in hot soapy water overnight. Usually works better when you soak them soon after the vessel gets stained. Then use the steel wool pads you get in the US stores with Ajax powder or Bon Ami powder to scrub them. Show alittle muscle when you scrub them. Has worked well the few times I have stained my steel vessels.
Asa rule of thumb, I do not use steel vessels to boil milk or shallow fry anything. Non-stick works better in these cases and helps avoid stains in shiny stainless steel. Isn't the name an oxymoron? :)

My stainless steel cookware set came with instructions that seems to work for me everytime i burn something! It says to pour 1 cup of vinegar with one teaspoon dish washing soap into the pan that needs to be cleaned of tough stains and dilute with 4 cups of water. Boil this mixture for 20 minutes on medium heat (keep the lid OFF). Allow to cool. And scrub now as usual. All the hard stains vanish!
