Diet in indian culinary

I think, I wrote a reply when some one previously asked the same question. Infact " Most of the Traditional Indian recipes are healthy. Its well balanced with carbohydrates, proteins, fats and minerals and other nutrients. It was scientific fad to promote that proteins are the most important. now truth is dwaning that carbohydrates (un-refined) should be more than 60 and 30% protein and 10% fat. Indian diet follows most often this pattern. Take example idli, 60% carb, 30% protein (urid dal) and rest a little fat. We have westernsised our diet and add more oil, ghee etc and make it unhealthy. Healthy diet depends on what we cook and how we cook and how we eat. Every natrual form of food is good. There is no good and bad food. Everyhting has its own unique nutrients that the other might not supply. Eating all the foods in a balance and avoiding routine is the healthiest way of eating. We now stick on the same fruits and vegetables, grains etc and how can that be healthy?. I know many indians eat only potatoes,, egg plant, carrots and in fruits eat only bananas and apples. If you want nutrients in right amount eat all types of food sources.
Cholesterol in not in vegetarian food. It forms in our body by our eating and living habits. If we change that we will not have these diseases.

hi vasanthi, i agree with pradeeph.south indian veg food is very healthy when cooked as our ancestors did.they did not use a lot of butter ,they used it to garnish both sweet and savoury dishes.oil was used minimally and other ingredients were used fresh and clean.
it is also the reason why food used to taste better in those days than now.
we still can incorporate those ideas by using fresh ingredients and less fat(not eliminate fat altogheter).
using a variety of vegetables and fruit instead of a choice few is the secret.

Hello,
All the traditional food of Indian regions was perfected over centuries.Indian food is rich or balanced as per the needs of each regions.North India has a dry climate hence there is a lot of oil and ghee in their diet.South has a different climate associated with sea shores.Hence the food is different.
If you do excess of anything, then it is not good.
