What i am telling u is the recipes that goes well with rice.
Chop the veg., and onion into pieces(small or big). Do seasoning in oil with mustard, curry leaves, urad dhal and fry onion. once it is done, add the cooked vazhakkai and add red chilli powder, turmeric(optl.) and salt. fry them till they are well mixed. Tastes very good with rice.
One more recipe is fry dhania, channa dhal and red chillies in oil and grind them with coconut. Boil the veg., Do the seasoning, add veg., and the powder. Fry them well till they are dry. This is the one we use to eat in marriages and other functions.
Hope this is sufficient for now.
bye

Hi R,
Thank u very much for the recepie. I have a doubt. In both the recepies do we have to pressure cook valaikkai for one whistle? ...and also let me know if we have to remove the outer skin?
Again, thank u very much for the response.

Yes, u should peel out the skin. Here in NJ, the plantain is not the same one like we get in chennai, the shape is just like our banana. So, i use to cook either directly in lots of water or in cooker (while cooking rice) in a quarter cup of water.
Also, u can try the below said recipe which my mom use to do during ceremony(srartham). Boil the veg.,(vazhakkai), and little moong dhal separately. Do seasoning in oil with mustard, urad dhal and curry leaves, add the veg., and dhal. Dry fry pepper and jeera. Grind them and mix with the veg.,
bye
