doubts on erisseri

I have read chitra's kerala recipes.But I still need help to clear some doubts.Wanted to know if we can make erisseri with toordal.While cooking unripe bananas should we peel off the skin completely or can we cook it with the skin.After everything is made will it be loose in consistency or thick?Though i have eaten it I have never made it own my own.(took all the good things in life for granted!!)So Please pour in your valuable suggestions and help this blissfully ignorant soul
