Nagercoil Aapam Curry

Guys,

Here's the recipe for Aapam curry. One of my favourite mom's recipes!

Ingredients:

Potatoes – 250 gms
Onion – 3 medium
Mustard seeds – 1 tsp
Curry leaves – 8 –10
Red Chilly powder – 2-3 tsp
Dhaniya powder – 2 tbsp
Coconut – grated ½
Saunf – 1 teaspoon
Elaichi – 1
Laung – 2
Dalchini – ½ inch
Turmeric powder – ½ teaspoon.

Roast dhaniya powder and mirch powder till they turn a little brown. Add grated coconut, saunf, elaichi, laung, dalchini and turmeric powder and grind to a fine paste.

Cut aloo and onion in cubes. Heat 2 tbsp oil. Add mustard and when it starts crackling, add curry leaves and onion. Fry till Onions turn transparent. Now add the potatoes. Add 1 glass of water and let boil. When potatoes are done, add the ground masala and salt to taste. Boil for 5 minutes and enjoy with hot crispy fluffy aapams.
