This is my first visit. Can anyone tell me how to make idiyappams(sorry for the spelling). I've tried once but failed, turned out to be thosai, please help me.

Hello Jacqueline,
Here is the recipe for Idiyappam. It is also called Noolputtu in Kerala. (Steamed rice noodle)
Idiyappam or Noolputtu
Ingredients:
Rice flour 2 cups
Ghee 1 tablespoon
Salt to taste
Grated coconut (frozen or fresh) 4 tablespoon
Mould - to press and shape the dough to Idiyappam.
A steamer- like the one for Idlies.
Method:
Boil about 3 cups of water and set aside.(You may not need 3 cups of water to make the dough). In a heavy bottomed saucepan, place the rice flour and add salt (1/8 teaspoon or little less) and ghee. Mix well. Add boiled water, a little at a time, to the flour and mix it with a spoon. Check and adjust the salt. Continue until you get a soft dough. Make sure that it is not watery.
Cover the dough with a slightly wet paper towel, and let it rest for 20 minutes.
Now boil water in a steamer, like the one we use for making Idlies. Grease the Idli stands with ghee or non stick spray like Pam. Also grease the Mould to press the dough to form Idiyappam. Spoon the dough into the mould and press it onto the Idli stand with a circular motion to form the Idiyappams. Sprinkle grated coconut on top of each appams. Place the stands in the steamer and cook the Idiyappams for about 10 minutes. Open the lid carefully and make sure that they are cooked well, before taking the stands out.
With a fork, remove the Idiyappams onto a serving tray.
Serve the Idiyappams, with Potato stew, Coconut chutney or with thick coconut milk and sugar.

Hello Chitra
Thank you for the idiyappam recipe. Can I use butter instead of ghee, becos I don't know where I can get good ghee here in France? ALso another problem, I have an older version of the idli steamer that my mum gave me, I can't really press the dough directly into the moulds ( it will start leaking). Can I use cloth to cover the moulds instead?

Hi Jacqueline,
Yes, you may use butter instead of ghee. About the dough leaking through the holes, means that your dough is too thin. Actually, you should be able to make Idiyappam using the old Idli maker. The dough should not leak through the holes. Add water little by little and make the dough. You should be able to hold the dough in your hand like a round sphere. When you press the dough, the Idiyappam should retain the shape.

i visited this thread accidentally. i found something i was looking for all this while. i mean the recipe for idiappam. thanks alot. but i would like to know which rice we should use(boiled or raw). i stay in kuwait. its difficult to get the right kind of rice here. please help me

Hello Sanjana,
You may use raw rice (Long grain) flour to make Idiyappam. Here in US, I use the rice flour we get in Indian stores. (Lakshi brand or Nirav) I never made rice flour at home, since I don't have a dry grinder as we have in India. Hope this helps and good luck.

Can someone tell how to get good idiyappam. I use rice powder which we get from Indian stores at U.S and mix with hot water, oil and salt to get the idiyappam. My problem is that my idiyappam take 1+ hours to get cooked. I don't know where is the problem, so can anyone help me out. I have attempted 7 times ... but couldn't make good cooked idiyappams.

Hello Jacqueline and Sanjana,
Here is a very important tip to make soft idiyappam, that Sush has posted in another thread. First steam the rice flour by placing the flour in a cloth, tie and steam it for 15 minutes. Then follow the recipe.

Dear Mini,
Yes, you can make idiyappam in pressure cooker, the way we steam idlies. Grease the idlithattu, before pressing the idiyappam on it. Make sure not to place the weight on the cooker lid.The pressure may flatten the appam. Cooking time varies with the size of the vessel, and the number of appams you are making at one time. I guess it may take about 5 minutes, after the water starts boiling. We may have to adjust the time by trial and error.

Hi Liz,
Yes, you can use rice sticks to make idiyappms. It is not authentic but is a short cut. Just boil water enough to immerse the whole rice stick block.(Do not break it into pieces). When the water is boiling, add the rice stick and let it boil for 3 minutes and then simmer for 2-3 min. Drain the water and hold the pot under cold water stream. (This is to prevent them from sticking.) Drain completely and spread on plate. This is nothing but idiyappam done easy way. (I always do this way, and not the authentic way since it takes so much of time) . Believe me, difference cannot be noticed.

One of my friends told that the rice flour available in Indian stores is already roasted and hence we don't need to roast it before making puttu and other dishes. Is that true?

Dear Mini,
I think that the rice flour we buy from Indian store may be roasted. Otherwise it won't have a long shelf life. For soft Puttu,and idiyappam we need to steam the flour, and this tip was posted in the forum by Mrs. Soma and Sush.

Hi Mini and Chitra,
The rice flour that we buy from Indian store is not roasted. You can get roasted rice flour in a different package itself. It will be dull in color. (Not perfect white)I don't know if this is available everywhere. I have seen it in indian stores of Houston.

Thanks CI for the information about the rice flour. I always buy the pure white flour, and use it for Puttu, idiyappam, murukku, vattayappam and vellaappam. Because it stays in the pantry fresh so long, I guessed it may be roasted. I hope Mini reads this.

The chinese rice sticks can be used for idiappam but while boiling it in water, it is necessary to add some salt.

Hi all,
Easy way to Make Iddiyappam,
Ingrediets:
Raw Rice Flour - 1 Cup
Water (Well Boiled) - required amount
Salt - Required quantity
First mix the salt with the flour.
Put the hot water little by littel amd mix well till it becomes dough.
Immediatly make idiappam with idiappam maker on Idly Thattu.
Note :-
1.While using the hot water you need not to boile the Flour.
2. Use the cloth on the Idly thattu.
3. Make the Idiappum while the dough is hot it will give softness.
4. Leave for 5 minutes on the steamer.
