Hello Wally! Might be kind of late at the response. Restaurants normally use a basic lamb curry, without too much of the gravy, and then add cashewnut paste, cream, butter, seasonings, chopped cilantro, yoghurt, spice powders and stir fry it till the sauce is well blended, with a little water, garnished with almond slivers
You could make this at home too. Wash and cook lamb with chopped ginger and garlic in a heavy bottom pan with a little oil. Cover and cook in its own moisture. Add salt when meat is almost done. When the moisture has dried up and the meat is cooked, add your sauce made with fried onion and cashewnut paste, chopped green chillies, coriander, cumin and garam masala powders, cardamom powder. Stir fry for some time. Add yoghurt, chopped cilantro and a little water to bring the sauce to the right consistency. Finish off with cream and butter. Garnish with almond slivers. Some places may also use silver leaf or varq for garnish.
