Hi Ashley,
Some of the South Indian food for road trip as of I know, The 1st place goes to tamarind rice - will stay for atlest 4 days, 2) lemon rice - will stay for 2 days, 3)Idlies with a little sesame oil spray on the top will stay for 2 or 3 days 4) Curd rice 1-11/2 days.On the side dry coconut chutney called as sambal in Ceylon, and papads. These were the foods which they used for long road trips in olden days when there were no bus services.Hope this will help you.
