SPICY VEGETABLE CURRY IS MADE WITH ALL SEASON VEGETABLES IN COCONUT MILK & TASTES DELICIOUS WITH ALL KINDS OF INDIAN BREADS& ALSO RICE.
IT CAN ALSO BE A SIDE DISH FOR IDLI/DOSA.
INGREDIENTS
ALL SEASON VEGETABLES
( CARROTS,PEAS,CORN,CAULIFLOWER,POTATOES,BEETS,RED
RADISH,CAPSICUM)ABOUT 500GMS
ONION 1
GARLIC PASTE.1TSP
GINGER JULIANNES1TSP
GREEN CHILLIES CUT-3-4
TOMATO PUREE 1/2 CUP
SALT TO TASTE
TURMERIC POWDER,
RED CHILLI POWDER 1/2TSP
SUGAR 1/2TSP
JEERA POWDER 1TSP
GARAM MASALA POWDER 1TSP
WHOLE GARAM MASALA LIKE CLOVES CINAMMON & BAY LEAVES 1 EACH
COCONUT MILK 1CUP
OIL
METHOD
CUT ALL THE VEGETABLES INTO CUBES.
IN THE PRESSURE COOKER,FRY THE ONIONS,GARLIC & GREEN CHILLIES .SAUTE THEM.THEN ADD TOMATO PUREE.
NOW ADD SALT,TUMERIC,CHILLI & JEERA POWDER & COOK.
NOW ADD ALL THE VEGETABLES.
ADD SUGAR & GARAM MASALA POWDER.
NOW ADD THE COCONUT MILK.ADD SOME WATER & ALLOW IT TO BOIL.
ADD THE CURRY LEAVES,GINGER & WHOLE GARAM MASALAS.
PRESSURE COOK IT FOR 3WHISTLES.
REMOVE & SERVE HOT .
GARNISH IT WITH CORRIANDER LEAVES.
