how to prepare puttu with rice flour

hai, this is the first time i am posting...could anyone tell me how to make puttu with the rice flour available in the indian stores in US.and also pls tell me if we can get raagi flour in those stores. i saw many responses from chitra regarding idiyappam and also knew that she prepares puttu and various other south indian type food regularly in her house. so i hope to get the response very soon....atleast from
chitra....please.

Dear Chitra, one small tip from my late mother-in-law in making sothi, is to keep on stirring the coconut milk, once you put it on the stove, till it reaches the boiling point. This prevents the milk from curdling. The method of preparation is just like Kannika's, though we slice the green chillies into four quarters, then slice it into halves, also the onions are thinly sliced. Thanks

Thanks a lot for the tip to prevent the coconut milk from curdling, while making Sothi. I will be making it this week and will definitely post the result. Thanks to both of you, Kannika and Kavitha for the recipe and method.

I am very happy to let you know that I made Sothi according to your recipe and instructions and it turned out great. I made Idiyappam according to CI's recipe and they were very soft and tasted great. Thanks to all of you...

You must be confused. I never gave the recipe for idiyappam. I had only given the short cut method. Maybe the credit should go to someone else.

Hello CI,
Thanks for correcting me. Sorry about that. I must thank Sush who gave the tip to steam the rice flour before making the dough for Idiyappam. I never did that before and it made a difference in both softness and taste. Thank you Sush.

iam very much interested in making idyappam please if some one can post the recepie i will be greatful. i am from the iyer family from palaghat and i used to eat a puttu made by iyer does any body know how to make it. i heard it isvery difficult to meke . the puttu made by keralites are different it is the salted version butthe southinidan tamils make sweet with jaggery , by the way the sothi seem like a tasty stuff i am going to tryit . will give yuo feedback after i make both the idiappam and sothi.thanks all

This is razia here .My husband and me are very fond of puttu ,so finally somehow we found an srilankan store and purchased a puttu maker actually the rice flour i buy from the indian stores in us but unfortunately so many times i tired making puttu but it doesn't come out properly ,like it's not getting cooked properly at all so please can u help me out.Well tell me in which pressue cooker i can fit that puttu maker and all okay bye

Hello Razia,
You can place the Puttu maker (the elongated projection at the bottom of the Puttu maker will fit well onto the outward projection on the top of the pressure cooker lid) on the top of the Pan Pressure cooker lid. Before you fill the Puttu maker with the well mixed and wetted rice flour, you must place 2-3 tablespoons of grated coconut at the bottom of the Puttu maker . Then fill the rice mix on top of the coconut. This is a very important step. If this is not done the rice flour will block the hole through which the steam enters the Puttu maker. The Puttu gets cooked by the steam which passes upward through the Puttu maker. When the steam appears at the top and comes out through the top of the Puttu maker, wait another 3-5 minutes and then take out the Puttu. It will be cooked by then and you will get the aroma of the cooked Puttu. Hope this helps. There is a thread about Puttu on this forum, where it has been written in detail. Boil 2 cups of water.Add 1/2 tsp of salt and 1 cup rice flour.Mix well.Take off from fire.Add 1tsp ghee.Put it in the idiappam press.Boil water in a steamer(idli cooker).Put little coconut in each idli moulds and press the dough.Steam it for 10 mts on high flame.

Take a pot, fill 1/4 height with water.
Take a muslin cloth and tie the mouth of the pot
tightly.Put the prepared puttu flour on the cloth.
Cover the pot with a cover,and steam the puttu.
Or if you have a idli maker, you can spread the flour in the idli mould and steam the puttu
