Secret of long life of caucus mountain folks (100yrs minimum) is credited to this simple curdish/fermented milk.

I have seen KEFIR being sold at health food shops and now SAFEWAY is reported to be selling kafir.
Pl try and let me know.
Best thing to do will be to buy kefir starters and ferment milk at home.

I just saw your message and I'm so happy for you.
I'm really, really pleased the culture arrived safe and you're much better now. I haven't read the articles yet but I will later today. You did a lot of research. It's funny I was a bit afraid when my friend gave me that culture because I didn't know anything about it, now I'll pass to her all this new information. It is a miracle. I told her I sent you some. She was happy.

Thanks for your reply.
I think that the best thing to do is preparing your own culture from starters.
To do that, we need to use unboiled fresh cow's milk. But is it possible to get in Portugal ?
I have started a fresh culture from fresh cow milk where the cow was milked in front of my eyes and culture mixed within ten minutes of milking.
Thiswas mixed in a glass bowld. I aim to grow this culture till I get really good , solid florets/corns are got.It may take about five days to a week.
I will be filtering it in a sieve and then preserving the florets/corns culture in a little milk in a glass bottle and fridge it.

Hi, Mr. Trivedi,how are you?
I'm afraid where I live I can't get fresh cow milk. I have a cousin in the north of Portugal who has a cow and several sheep but he's far away from me. Actually I was there last weekend before I saw your message. How lucky you are to be able to get fresh cow milk. I'm sure you'll grow the best culture.
Now I have two questions:
A friend of mine got some kefyr from someone else but now she's been mixing soy milk instead of cow. Do you think the culture will survive?
The second question is about soggy kefyr. Why does it happen and what should we do?

Hello Ivete,
Kefir can be used to ferment juices, coconut water/milk and people have been using fermenting Soya milk also.
But traditional kefir is always cultured and fermented in non metallic wood/leather containers.
In absence of leather/wood , glass containers are best.
I cultured in milk and threw away first kafir retaining only a small portion and regrowing it after adding a little sugar.
Now I am waiting after 36 hours at 25 degrees to cultvate first properly grown kefir culture grown in non metallic glass bowl.

Soggy kefir is due to its relatively young age . 24 hours fermentation is not enough at low temp.
Let it stand for 36 hrs.
Discard first two culturs retaing and regrowing from same again.
Traditional kefir is grown on cow's milk.In non metallic containers.
I am using glass now.

How to grow Hibiscus plant in bay area, ca(USA)? What type of hibiscus should be planted that can be used for Hair treatment? Also it would be great if someone tells how to use hibiscus leaves for hair. Pls someone respond.

Hi GV ,
I don't know which type of hisbiscus can be grown in CA . But when I was in India , I use hisbiscus leaves and grind it smoothly like a paste in mixie and then use the same paste as Sivakkai /Arappu . But you can use hisbiscus flowers also.
I have used red , pink , orange coloured hisbiscus flower leaves for my hair. Hair grows thick , nice black color

What is Kefir?
Kefir is a natural probiotic. It contains live active cultures of normal flora that will actually repopulate your digestive tract and aid in digestion. Kefir is superior to yogurt because yogurt is made with transient, less potent bacteria. The bacteria in yogurt will last a few days in the digestive tract, and you need to keep reintroducing them. Kefir contains more organisms than yogurt, and the "normal flora" in kefir is made of vary strong strains of micro organisms (unlike yogurt) which will help to over take pathogenic organisms that have taken over. Kefir will repopulate the digestive tract with good organisms. We consider this the more natural way to add good bacteria to the digestive tract and feel these strains are superior to any capsules which might contain organisms that have been dried.

The cultures on Kefir and active and growing when the enter your body. They thrive in dairy and use up the lactose and partially digest the proteins, making it a product that most people can ingest and will benefit from. Even people with milk sensitivities can usually drink kefir. These strong strains of digestive bacteria will also culture coconut water from young coconuts (see below for the recipes) or any milk product. Is it different than Yogurt?
Yes. There is research showing that Yogurt contains left turning bacteria and kefir contains right turning bacteria. This researcher even states that young children and nursing mothers should stay away from the left turning bacteria found in Yogurt. He shows from his research that kefir and its right turning bacteria are far superior and much more beneficial to the digestive tract than the cultures found in yogurt.

Yogurt contains transient bacteria and will not repopulate the digestive tract, but the active, growing, living cultures in kefir will.
The lactose in kefir is all digested by the time it is ingested, and some of the proteins have been broken down. Therefore, kefir can be used by many people who have sensitivities to milk . The same is not true with yogurt. Kefir can be made from any milk: goat, cow, ox, sheep, etc. A dairy free kefir can also be made from young coconuts. This is very exciting.

You can find kefir full milk or fat free milk, yougurt in in Russian grocery stores. I usually get fresh refrigerated kefir milk and Yogurt either in Brooklyn or Brighton Beach in New York. Fresh kefir is always available in some health stores. This is getting popular like soy milk with main stream Americans. Yes you can make it but why experiment when you can get it off the shelf. Even my Russian friends who introduced me to this product assure the the off the shelf quality is better than home made in New York
