question? How was carnatic music documented

Western, nusic, is being documented in solf notes, scales and majors, which serve as easy references. the thing, is that, I have never seen carnatic singers or players play from any piece of paper. How are they able to set he melody prescisely right?

What I've always found puzzling is the tradition that it is OK to read the lyrics froma piece of paper but considered wrong to have any kind of melody notation in a concert. Isn't it at least as easy, if not easier, to remember words as to remember melody?
Any comments from singers?
